Summer veggies coconut curry
A delicious and healthy recipe
Preparation: 15 minutes
Cooking: 20 minutes
Ingredients for 6 servings
• 1 cup fava beans
• 1 cup sweet peas
• 1 cup green beans
• 2 cups of your favourite mushrooms
• Two zucchinis (a mix of green and yellow for a touch of color)
• Juice of 2 limes
• A bit of cilantro
• 1 small onion
• 1 tablespoon coconut oil
• ¾ cup coconut milk
• 1 tablespoon turmeric
• 1 teaspoon cumin
• 1 teaspoon palm sugar
• Pinch of grey sea salt
Optional garnishing:
• Few leaves of cilantro and coconut powder
Preparation
1. Wash, dry and clean all veggies
2. Chop the onion, mushrooms, zucchinis and green beans into small pieces
3. Steam sweet peas, green and fava beans for 5 minutes and peel the favas
2. Heat the turmeric and cumin with ½ tablespoon coconut oil in a large saucepan for one minute stirring well
3. Throw in the onion, mushrooms and zucchinis with the spices and stir-fry on high then medium with the remaining coconut oil for about 5-10 minutes
4. Add steamed beans, peas, favas, lime juice and coconut milk as well as salt and sugar and cook on low with a cover, stirring occasionally for another 10-15 minutes until all veggies are tender
Serve it with a side of coral lentils and/or steamed wild rice mixed with a bit of coconut milk and powder.
