Quinoa Salad with Dried Apricots

Quinoa can be prepared in many different ways. Here is an easy and quick quinoa recipe for a mild and slightly sweet dish.
Ingredients for 4 servings
- 1 cup of quinoa and 2 cups of water
- 1 large tomato
- 1 cucumber
- 1 handful of dried white raisins
- 6 dried apricots
- 1 lime
- Olive oil
- Soy sauce
- Salt
Directions
- Cook the quinoa according to instructions on package. Hint: keep it covered during the entire cooking process.
- Dice the tomato and the cucumber.
- Rinse the dried apricots and dry them thoroughly. Cut them into small pieces.
- Rinse and dry the dried raisins.
- When the quinoa is cooked, take the quinoa off the stove and add raisins and apricots. Mix and let rest for a few minutes.
- Pour in a serving bowl.
For the dressing
- 5 TBS of olive oil.
- 2 TBS of soy sauce.
- The juice of one lime.
- Option: a pinch of salt, fresh coriander or parsley, diced onion.
