Cacao Magic Smoothie Mousse
Healthy enough for breakfast, but rich and satisfying enough for dessert, this smoothie bowl fills all of the requirements!
Ever totally messed up and made something really yummy by accident? Well, that’s exactly how this recipe happened! Halfway through making a smoothie, I realized that I only had half of a frozen banana. UGH! How was I going to make a decadent chocolate smoothie with only HALF of a frozen banana? I saw a regular banana sitting in the fruit bowl, so I decided to throw that in too. Too make up for the lack of frozen banana (which gives smoothies thickness and creaminess), I replaced my go-to almond milk with full-fat coconut milk. Why full-fat, you might ask? Because you don’t need to be afraid of GOOD fats! Fats like coconut keep you fuller, keep your hair and nails glowing, and help you absorb nutrients more efficiently. Not to mention, full-fat coconut milk makes any average smoothie into a super creamy and decadent treat!
I had no complaints. Coconut milk+avocado+almond butter=MAGIC!!!
After blending the concoction, I realized that my “smoothie” was room temperature, and the texture was fluffy like mousse. Thanks to the Cacao Magic, it was like chocolate mousse. I had no complaints. Coconut milk+avocado+almond butter=MAGIC!!! I scooped the mixture into bowls and decorated it with coconut shreds, cacao nibs, and bee pollen. I let the kids decorate their own with the superfood “sprinkles” of their choice. Healthy enough for breakfast, but rich and satisfying enough for dessert, this smoothie bowl fills all of the requirements!
