From Frozen to Fabulous Easy Steps for a Great Dinner

When it comes to cooking, not all of us are experts. While some people can master four-course meals for large families and groups, others may prefer using their oven to store shoes like Carrie from Sex and the City!
These days, many of us are cooking at home more than we ever have before. So, let’s have a look at easy recipes to impress your family or treat yourself. No fresh produce? No problem! With fewer trips to the grocery store, many of us are also stocking up on canned and frozen vegetables. But frozen doesn’t have to mean boring! Mint Pea Soup with Marinated Avocado Pieces

Makes 2 servings
- 140g onions, peeled, halved and cut into rings
- 1 garlic clove, peeled, halved and minced
- 8oz of frozen sweet peas
- 500ml (17½ fl oz) vegetable broth
- Sea salt and pepper
- ½ avocado, pit removed, peeled and cubed.
- Juice of 1 lime
- ½ handful mint leaves, washed and chopped
- Sweat the onions and garlic in a medium-high heat. Add the peas, stir well, pour in the vegetable broth and season immediately with salt and pepper.
- Separately combine the avocado cubes with the lime juice, a pinch of chopped mint and a little salt.
- Blend the soup well with the remaining chopped mint in a blender suited for hot foods. Place in the serving bowls and garnish with the avocado pieces.
Roasted Salmon with Sweet Potatoes
Adjust amounts to serving size
- Sweet potatoes
- Olive Oil
- Aluminum foil
- Sweet Potatoes: No need to peel. Place on a foil-lined sheet pan and close the foil as if you wanted it to look like a wrapped gift (papillote). Bake for 45 minutes to 1 hour at 375ºF.
- Salmon: Defrost a few hours before, or the night before you can simply put the frozen salmon pieces in your refrigerator.
- In your pyrex bowl, add the juice of a lemon, olive oil, salt, pepper, and a few shallots (peeled and cut into rings).
- Bake in the oven for about 20 minutes.
Makes 10 servings
- 200g frozen bananas (peeled and sliced before put in freezer)
- 400g frozen fruits (any frozen berry mix)
- 1 orange or clementine (optional)
- Place ingredients in a strong blender or juicer and macerate on a high speed setting. If needed, add the juice of half an orange or 1 clementine.
- Serve in a glass or bowl and garnish with a fresh fruit coulis.
