French Detox Green Lentil and Cabbage Soup
The champion meal for after the holidays. It’s warm, delicious and easy!
We’ve all been indulging in guilty pleasures and comfort food over the past few weeks, and while we’ll miss having a festal justification for consuming mashed potatoes and pie all day, 2019 is here so it’s time to whip back into shape! Detox from all the heavy family dinners with a warm, refreshing bowl of cabbage soup– the champion, post-holiday meal. It’s easy, healthy, and delicious!
French Detox Green Lentil and Cabbage Soup

Ingredients:
- 2 cups of chopped onions
- 1 garlic clove
- 2 tbsp of olive oil (extra virgin)
- 1/2 cup halved cherry tomatoes
- 1 cup chopped organic carrots
- 5 cups vegetable broth
- 2 cups french green lentils
- 1 cup chopped celery
- 2 cups chopped cabbage
- 2 teaspoons cumin
- 1 bay leaf
- 1 teaspoon dry rosemary
- 1 lemon
Preparation:
- Rinse and soak the lentils for 3 hours.
- In a large heavy pan, on high heat cook onions, garlic, celery, carrots, tomatoes, cabbage with the olive oil until tender (10 minutes).
- Add the broth, the lentils, and the lemon juice and cook on medium heat for another 40 minutes.
